In honor of my Uncle Bob who passed a couple of years back, I give you Uncle Bob's Cranberry Relish:
12 oz package fresh cranberries (I use frozen that I thawed)
one 6-oz tangerine, quartered and seeded
3/4 c sugar
1/2 c coarsely chopped crystallized ginger (~2.5oz)
1/2 c orange marmalade
Put cranberries and tangerine into blender and coarsely chop. Do not peal the tangerine* but make sure it has no seeds. Mix in the remaining ingredients. Cover and refrigerate overnight.
*Ben's note: I use only half of the rind of the tangerine as it can be a bit overwhelming.
Uncle Bob was a foodie and a great amateur chef. Every Thanksgiving he would fry a turkey and make some of the best side dishes. Cranberry Relish was my favorite dish that he made.

Ben Finklea
Ben entered the world of online marketing in 1995 when he founded a web design company from his dorm room at Texas A&M University. Since then, he has worked in various capacities in sales and marketing, from tiny start-ups to Apple Computer.
